Puglia is the most important region in Italy when it comes to olive growing. The territory is characterized by the presence of century-old olive trees, which probably better represent the Mediterranean civilization. The olive oil produced here is strictly extra-virgin and an essential part of everyday Pugliese cuisine. You will be shown an underground limestone mill or Frantoio, where a guide will explain the way the mill was used and show you the traditional techniques for making Olive Oil. Afterward you will take part in a tasting of different varieties of oils and traditional food.
