Cheese making

Mrs. Griffin learning to make mozzarella and caciotta......
Mozzarella is one of the most famous Italian words abroad. This delicious cheese, which comes from Southern Italy, has a prominent role in Pugliese cuisine and is widely known all over the world. Its name derives from the dialect word mozza, meaning to cut, because of the method of working.
You will be shown the mozzarella making process and, if you like, you can participate in the shaping of the cheese. But more importantly, you will take part in a tasting of different local, home-made cheese: burrata, giuncata, ricotta and many others.
